Because you got phoenix downs and live ups etc,etc,etc. The point of the game is knowing the strategy ot kill the monster. If all your players could die 3-5 times then it would be pretty pointless and too easy. I mean you cna already revive your characters like 99 times in a single battle. So for instance in Final fantasy u got 3 characters = 3 lives. If you revive them u got infinite. If you loose all 3... well you either suck or got screwed over.
Think about it. Would you really want to be invincible? What would be the point of leveling up then?

BTW, Diablo 2 offers a hardcore mode which if you die... you loose all your items and everything you build including your character... that's threatening (loosing a level 90 -_-...Why do you get only one life and no continues in most RPG video games?
To try and make it more like real life. Think about it you only live once here on earth , so to make the game more realistic you only get so many lifes (1,2,3,4,5,ect lifes) it is all common sense. Hope I help you there .
